Rolls, Like Butter (P, TNT)
Source: "More Bread Machine Magic," by Linda Rehberg and Lois Conway
Yield: 12

3/4 cup soy milk
1 egg
6 tbsp. softened margarine
3 tbsp. sugar
1-1/2 tsp. salt
3 cups all-purpose flour
2 tsp. yeast

Pre-heat oven to 400°F.

Place dough ingredients in bread pan, select Dough Setting and press Start.

When the machine is done (mine takes 90 minutes on the dough setting), remove the dough and place on a lightly floured cutting board.

Cut the dough into half. Gently roll one half into a 6" rope and with a sharp knife, divide though dough into 6 pieces. Repeat process with other half. (You will now have 12 pieces of dough).

Form the rolls--our favorites are clover-leaf and knots.

For Clover-Leaf: Lightly grease a muffin pan; divide each piece of dough into 3 pieces, roll each piece into a ball; pull edges under to make smooth tops. Place 3 balls in each greased muffin cup.

For Knots: Lightly grease a cookie sheet. Gently roll out each piece of dough into a rope, and then form a knot.

Cover and let rise until doubled in size approximately 30 to 45 minutes.

Bake for 12 to 15 minutes or until golden.

Poster's Notes:
I've only made these pareve, the recipe as they wrote it is only dairy.

The great thing about this recipe is that the dough is incredibly easy to work with and makes the best rolls we've ever had. They freeze very nicely.
