1/3 cup dried mushrooms, such as Shiitake or Porcini
Coat the cups of a popover pan or six 6-ounce custard cups with nonstick cooking spray. Place the custard cups on a 15"x10"x1" baking pan; set aside.
In a small bowl pour boiling water over the dried mushrooms to cover; let stand for 5 minutes. Drain, pressing out the liquid. Finely chop the mushrooms.
In a medium mixing bowl stir together mushrooms, salt, thyme, and pepper. Add milk, eggs and oil. Using a rotary beater, beat until mixed. Add flour and beat just until mixture is smooth. Spoon batter into prepared cups, filling each half full.
Bake in a 400°F oven about 35 to 40 minutes or until very firm. Remove from oven. Immediately prick each popover with a fork to let steam escape. Loosen edges. Remove popovers from cups. Serve immediately.
