Pizza Dough, Italian Bakery (P, TNT)

Yield: 2 large pizzas

1-3/4 cup warm water
2 package yeast
1/3 cup olive oil
2-1/2 tsp. salt
2 tbsp. sugar
3 cups flour
2 cups bread flour

Whisk water and yeast and allow to stand for 3 minutes.

Meanwhile put oil, salt sugar, and most of the flours in a mixing bowl. Add the bloomed yeast.

Knead to make a soft dough adding more flour if necessary (5 to 8 minutes). Allow the dough to rest a few minutes, form into a ball, and cover to let rise.

Shape as needed for pizza, calzones, or breadsticks.

Poster's Notes:
This is my favorite recipe for pizza dough. It makes a lot of dough enough for 2 very large pies. I usually make 1 pie and then have enough dough to make calzones and also some breadsticks. I sometimes like to put a piece of mozzarella cheese into the rolled out stick and bake it. Yum!
