Muffins, Sweet Potato-Raisin Bran (D, TNT)

Yield: 12 small muffins

2-1/4 cups raisin bran cereal
1 tbsp. baking powder
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1 tbsp. sucralose-type sweetener
1 cup sweet potatoes/yams, baked and mashed
1/2 cup skim milk
2 egg whites
2 tbsp. canola oil

Preheat the oven to 350°F. Spray your muffin tin or papers that you place in the muffin tin with cooking spray.

Combine the dry ingredients in 1 bowl.

In a second bowl, place mashed sweet potatoes (yams), milk, egg whites, and oil together and mix. Add the dry ingredients and mix well.

Fill muffin tins half full and bake for 18 to 25 minutes or until golden.

Poster's Notes:
I put into toaster oven before eating, they are delicious when warmed.

They freeze well.
