Muffins, Squash (P, TNT)

Serves: 12

2 4-ounce jars Stage 2 butternut squash baby food
1/2 cup oil
3/4 cup brown sugar
1 tsp. water
1 tsp. vanilla
1 tsp. lemon juice
1-1/4 cups flour
1/2 tsp. baking soda
1/2 tsp. baking powder
2 eggs

Mix all ingredients together and pour into muffin pans.

Bake 15 minutes at 350°F.

Poster's Notes:
For the baby food, you can use 2 jars butternut squash or 1 carrot and 1 squash or 1 carrot and 1 sweet potato or 2 sweet potato ( I have also used the apple and yellow vegetable Stage 2 mixture).

My kids will eat an entire batch as soon as they come out of the oven.
