2 cup flour, sifted
Combine first 5 dry ingredients.
Combine egg and liquid ingredients.
Combine mixtures and stir to blend. Fold in fruit and nuts.
Bake at 350°F. For muffins, bake for 15 to 20 minutes. For 5x9" loaf pan; grease pan, bake 65 to 75 minutes.
Poster's Notes:
Instead of the cranberries, I used Craisins.
For getting batter into muffin tins, use ice cream scoop with spring action, sprayed with Pam.
I brought these to a Shiva house for breakfast, and they were gobbled up and got rave reviews!

2 tsp. baking powder
1/2 tsp baking soda
1/2 tsp. salt
1 egg, well beaten
1/2 orange, grated peel only
1/3 cup orange juice
1/4 cup water
2 tbsp. oil or margarine, melted
2 cup cranberries
3/4 cup pecans or walnuts, chopped
I found the muffins too sweet and would cut out some of the sugar.
