1/2 cup matzo cake meal
Mix dry ingredients. Mix wet ingredients.
Blend the two mixtures just until moistened. Fold in chocolate chips. Place in oiled or non-stick muffin tins.
Bake about 15 minutes at 400°F, or until they test done with a toothpick.

6 tablespoons potato starch
3/4 cup sugar
1/4 cup cocoa
1/4 teaspoon salt
2 teaspoons KLP baking powder
1 teaspoon baking soda
2/3 cup nonfat yogurt
2/3 cup lowfat milk
1 egg; lightly beaten
1 package vanilla sugar; or 1 teaspoon KLP vanilla
1 cup chocolate chips
If you can't get kosher for Passover baking powder, there is a substitution using baking soda and cream of tartar. I don't know the exact quantities. You'd never guess that these are Pesachdik and low-fat to boot!
