Muffins, Carrot II (P, TNT)

Serves: About 8

1 cup sugar
1 cup flour
3/4 cup canola oil
12 ounces baby food carrots (usually 3 jars)
1 tsp. baking soda
1 tsp. cinnamon
2 large eggs

Preheat oven to 350°F.

Mix sugar and oil. Add in eggs one at a time.

Mix dry ingredients separately then add with baby food to oil/sugar/eggs mixture. Mix with electric mixer for 3 minutes.

Bake in muffin cups for 30 minutes.

I have kept the ingredients the same but changed the directions from Susie Fishbein's to fit proper kitchen scientific method.
