Muffins, Blueberry (D, TNT)

Serves: 12 (or 48 mini-muffins)

1 cup sugar
2 cups flour
1/4 lb. butter
3 tsp. baking powder
1 egg plus 3 tbsp. sour cream and milk to fill a one-cup measure
1 cup blueberries
1 tsp. vanilla

Mix together the sugar, flour and butter. Set aside one-half cup to use as topping. To the remainder, add the other ingredients.

Mix and spoon into paper-lined muffin cups. Top with reserved topping.

Bake at 375°F for one-half hour.

Poster's Notes:
I use margarine instead of butter and vanilla yogurt instead of sour cream, as well as skim milk. No problem with making the substitutions; the muffins are just as yummy.
