Cornbread, Fat-Free (D/P, TNT)

Serves: 12

1 cup whole wheat flour
1 cup cornmeal
2 tablespoons sugar, or substitute
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 cup skim milk, (use soy milk for pareve)
3/4 cup creamed corn

Mix dry ingredients. Mix wet ingredients. Mix together, just until blended. Pour into a sprayed 8"x12" pan.

Bake about 20 minutes at 400°F. until lightly browned. Don't overbake or it will be dry.

Poster's Notes:
We had this for dinner one evening last week, topped with BBQ'd Lentils (click here for recipe) and cole slaw on the side. Different, and very satisfying. I subbed Splenda (sucralose) for the sugar, with no problem.
