Orange Corn Bread (D/P, TNT)

Serves: 8-10

1 cup + 3 tbsp. flour
1/2 tsp. salt
4 tsp. baking powder (1 envelope in Israel)
3/4 cup cornmeal
1 medium seedless orange (do not peel)
3 1/2 tbsp. sugar
1/2 cup margarine (1 stick Margarita in Israel) or butter in chunks
1 egg
1-1/4 cup milk (I used soya milk)
3/4 cup raisins (I omit)

Process dry ingredients, until blended, about 5 seconds. Empty bowl.

Cut orange in quarters and discard seeds. Process on steel knife 20 seconds. Add sugar and margarine and process 1 minute.

Pour egg and milk while machine is running, process 3 seconds. Add dry ingredients, process using on-and-off technique 3-4 times, just until blend. Add the raisins and process 1 second longer. (I omited)

Pour into a greased 9"x5" loaf pan or 8" square. Pan will be 2/3 full. Bake at 375°F for about 45 minutes, until cake tester comes out clean and dry. Serve warm or toasted with butter or preserves.
