Citrus Bread (D/P)
Yield: 24 ounce loaf

1-3/4 teaspoons yeast
3 cups bread flour
3 tablespoons wheat germ
3 tablespoons wheat bran
1/3 cup sugar
1/2 tablespoon salt
2 teaspoons orange peel, grated
1-1/2 teaspoons lemon peel, grated
1 egg
3 tablespoons butter or margarine
3/4 cup sourdough starter
3/4 cup warm water

Bring all ingredients to room temperature and pour into bakery, in order. Set "baking control" at 10 o'clock. Select "white bread" and push Start.

In hot & humid weather, use 1/8 cup less water.

Poster's Notes: For bread machine. The sweet and tart citrus flavor of this loaf complements chicken and turkey. Toast made from this moist, dense bread has a clear flavor that should not be masked by anything more overbearing than a slim coating of butter or cottage cheese.
