High Protein Challah (D/P, TNT)

Yield: 3 loaves

4 cups whole wheat flour
1 cup brown rice flour
1 cup oat bran flour
2-1/2 tsp. salt
2 envelopes yeast
3 cups vegetable stock, heated
1/3 cup honey
1/4 cup melted butter or margarine
1/4 cup vegetable oil
4 eggs
Up to 3 cups more flour of your choice for kneading

I make this in my 6-quart mixer.

Start with your dry ingredients, then add the liquid to incorporate. Knead in enough flour to make almost stiff, and knead in machine for 4 minutes then turnout onto floured surface to finish. It is too much whole grain flour to do all the kneading in the bowl.

When smooth, place in oiled bowl turning once to oil surface. Cover and put in warm place to rise about 90 minutes until doubled in size.

Turn back out on to floured surface, punch down and divide.

Shape into 3 loaves. Cover them and rise again about 45 minutes, until again doubled.

Bake at 350°F for 30 to 35 minutes. You may brush with egg before baking if you want the bread shiny.
