Chocolate Chip Challah II (D/P, TNT)

Yield: 2 loaves

Challah:
2 cups warm water
2 tbsp. yeast
7 to 8 cups flour
1 cup sugar
2 tsp. salt
1/2 cup cocoa
1/2 cup butter or margarine
4 eggs
340g chocolate chips

Chocolate Glaze (optional):
1 cup powdered sugar
1 tsp. cocoa powder
4 tsp. butter or margarine, softened
Warm water

Make Challah:
Mix water, yeast, and a pinch of sugar in large bowl. Let stand 5 to 10 minutes until yeast is active and frothy.

Add 3 cups flour and 1 cup sugar. Mix and allow to sit for 15 minutes.

In the meantime, combine 4 cups flour, salt, and cocoa powder, cut in butter or margarine until mixture is crumbly.

Add 4 eggs to yeast mixture and combine with flour/cocoa mixture; add chocolate chips (optional). Knead until smooth and elastic, and add 1 to 2 more cups flour if needed.

Place in an oiled bowl and then into a large plastic bag. Allow to rise until doubled, about 2 hours.

Punch dough down and knead for a minute or two. Place in 2 loaf pans, or braid. Cover and let rise 30 to 45 minutes. Bake at 180°C/350°F for 25 to 30 minutes.

Serve with some interesting jams or glaze with chocolate glaze.

Make Glaze:
Mix all ingredients together until smooth.

Variation:
Add pecans or walnuts, or dried cranberries or cherries instead of chocolate chips.

Poster's Notes:
Another member says: I have made chocolate challah in the past but have also added 1 cup of dried cherries in place of the chocolate chips. The combination of chocolate and cherries is awesome.
