Buns, Cinnamon II (D/P, TNT)

Yield: 24 buns

Buns:
5 to 6 cups flour, divided use
1 19-ounce package yellow cake mix
4 tsp. yeast
2-1/2 cups warm water
1/4 cup butter or margarine, melted
1/2 cup sugar
1 tsp. cinnamon

Frosting:
6 tbsp. margarine, softened
3 cups confectioners' sugar
1-1/2 tsp. vanilla extract
2 to 3 tbsp. pareve milk

Make Buns:
Combine four cups of flour, the cake mix, yeast, and water. Add the remaining flour, as needed, until the mixture forms a soft dough.

Knead the dough on a floured surface. Place the dough in a bowl, cover, and allow to rise for 45 minutes. Divide the dough into two sections.

Roll each section of the dough into a rectangle that is 4"x10". Brush the melted margarine over the dough. Combine the sugar and cinnamon and sprinkle over the melted margarine.

Roll up the dough along the length into a log. Cut the log into 12 slices.

Grease two 9"x13" pans. Place 12 rolls into each pan cut side down. Cover the pans and allow the rolls to rise for 20 minutes.

Bake at 400°F for 10 to 15 minutes. Cool for 20 minutes.

Make Frosting and Assembly:
Make the frosting by creaming the margarine, confectioners' sugar, and vanilla. Gradually add the pareve milk as needed.

Frost the cinnamon rolls while still warm.

Poster's Notes:
I have been meaning to share this recipe for quite some time. These are really excellent cinnamon rolls. I tried so many recipes before that were not what I wanted. These are soft and cake-like. This is one of the few recipes for which I use a cake mix. I hosted a potluck brunch recently and this was one of the most popular foods. I used a pareve cake mix and made them pareve.
