Bread, Gluten-Free (P)

Yield: 1 loaf

1 cup cornflour (cornstarch)
1-1/2 cups rice flour (brown or white)
1/2 cup potato starch
3 tsp. xanthan gum (available from health-food stores)
1 tsp. salt
2 tbsp. sugar
1 tbsp. yeast
2 eggs
2 tbsp. oil
1 tsp. vinegar
1-3/4 cups water

Mix the dry ingredients in a large bowl.

In a measuring jug, mix eggs, oil, vinegar and lukewarm water. Be sure the kneader (the pedal of the machine) is in the bucket.

Pour the liquid ingredients into the bucket and spoon over the dry ingredients from your bowl. Put the bucket into the machine and follow the machine's setting instructions.

Poster's Notes:
After a few minutes of the first kneading procedure, while the machine is running, open the lid of the  bread machine, take a plastic knife and mix all the ingredients manually until all the loose flour is mixed in and the mixture looks fairly smooth. It doesn't matter if the plastic knife touches the pedal. Close the lid and wait for the machine to do the rest.

Slice the bread only when the loaf is completely cold.
