Biscuits, Rosemary and Cheese (D, TNT)

1 cup flour
3-1/2 oz. butter, chopped
1 tablespoon sour cream
2 oz. cheddar, grated
2 oz. parmesan, grated
3 teaspoon chopped fresh rosemary
3 teaspoon chopped fresh chives

Preheat oven to 350°F. Lightly grease 2 baking sheets sift the flour and some salt and cracked black pepper into a large bowl.

Add the chopped butter. Rub the butter into the flour until the mixture resembles bread crumbs.

Add the sour cream, cheeses, and herbs and mix with a flat bladed knife. Press together with your fingers until it forms a ball. Wrap in plastic wrap and chill 15 minutes.

Roll level teaspoons of the mixture into balls and place on greased trays. Leaving room to spread. Flatten slightly with fork.

Bake for 15 to 20 minutes or until lightly golden. Transfer to wire rack and leave until cool.
