Baking Mix, Gluten-Free I (P, TNT)

Serves: Depends on how much is used, this makes quantities in multiples of three cups. So if you wanted you can prepare a larger quantity and keep it handy for daily use.

1 part tapioca flour
1 part cornstarch
2/3 part garfava bean flour
1/3 part sorghum (aka jowar flour)

If you are making 9 cups of mix it would look like this:
3 cups tapioca starch
3 cups corn starch
2 cups garfava bean flour (blend of garbanzo and fava beans)
1 cup sorghum

If you aren't using it within a week, best to keep it in the freezer and warm to room temperature before using. You can simply take out what you need instead of the whole container.
