9 cups flour
Dissolve the cube of fresh yeast in 1/2 cup of lukewarm water (add a pinch of sugar).
Mix together the flour, salt and sugar. Add the water and the dissolved yeast mixture to the flour and knead.
Smear a bowl with a small bit of oil. Put the dough in the bowl and let rise for 30 minutes.
Divide the dough into 18 pieces. Shape each piece into a rope and connect the ends of the rope to make a round bagel. Place on parchment paper. Let rise for 30 minutes.
Preheat oven to 375°F. Bring a pot of water to a boil.
Put in 2-3 bagels let boil for 30 seconds on each side. Remove from pot. Place on on a pan that has a layer of parchment paper on it.
Sprinkle with desired toppings (coarse salt or poppy seeds or sesame seeds or dried onion flakes or fried onions or fried garlic or a mixture of all the above).
Bake for approximately 30 minutes until golden.
Immediately freeze the portion not being on eaten the same day. Slit each bagel open before freezing.
