Unstuffed Cabbage I (M)

Serves: 6

5 cups shredded cabbage
1 lb. soy meat substitute/defatted ground meat
2 cans diced tomatoes with garlic/onion
1/2 cup raisins
2 tbsp. lemon juice
1 tbsp. brown sugar
1 tbsp. dill weed fresh or 1 tsp. dried
1/2 tsp. each allspice and pepper

Coat large nonstick skillet with cooking spray. Heat over medium-high heat, add cabbage and cook 3 to 4 minutes until wilted and lightly browned.

Add meat, tomatoes, raisins, lemon juice, sugar, dill, allspice, and pepper. Stirring to break up meat, bring to a boil. Reduce heat, cover, and simmer 5 minutes to blend flavors.
