2 stalks celery, diced
In the bottom of a roaster or casserole dish, place the celery and half the onions. Add the meat and cover with remaining onions. Add water, cover and roast at 350°F for 2 hours.
Uncover and add remaining ingredients. Roast uncovered 1/2 hour longer.

2 pound boneless chuck
1/2 cup water
1 20-ounces can tomato juice
2 tbsp. lemon juice
1/4 cup sugar
You can add cut-up potatoes, carrot slices, and a handful of raisins if you like for the last hour of cooking.
