Beef Braised in Pomegranate Sauce (M, KLP, TNT)

1kg (2.2 pounds) beef
2 to 2-1/2 cups of root vegetables, sliced or chopped
3/4 cup pomegranate juice concentrate, no sugar added
Oil for sautéing vegetables
Boiling water

Sauté the chopped onion in oil. Add the other root vegetables and sauté for 10 minutes. Add the pomegranate juice concentrate/syrup and mix.

Add the meat and enough boiling water to cover. Bring to a boil and then cook, covered, on a low flame until done (no longer than 2 hours!)

Poster's Notes:
For the root vegetables, can use 2 onions, leeks, parsley root, carrots, celery, kohlrabi etc.

I served this with rice and it was great.
