1 pound "marinating steak"
Marinate the steak in the orange juice at least 1 hour.
Sauté the onions in a pan in 1 tbsp. of oil until caramelized, adding the garlic during the last few minutes. Sauté the mushrooms in same pan, adding oil if needed. When done, remove vegetables to a bowl.
Drain the steak well, reserving marinade. Put into another small saucepan with broth and mustard, and warm gently. Add vegetables.
Raise heat in pan and brown the meat well. Add vegetables and kumquats to pan over steak, and reduce heat to a bare simmer, for about 40 minutes to one hour, or until meat is tender.
