1 lb. ground beef
In a large skillet, cook ground beef, onion, and mushrooms until meat is brown and onion is tender. Drain off fat.
Stir in gravy, dried parsley, garlic powder, paprika, salt, and pepper. Heat through.
Grease a 9" pie plate. Spread half of the mashed potatoes in the bottom and up side of prepared pie plate.
Spoon ground beef mixture over potatoes in pie plate. Top with remaining mashed potatoes. Bake, uncovered, in a 350°F oven about 30 minutes or until heated through. Sprinkle with snipped fresh parsley.
For a weeknight menu, the Women's League suggests teaming this homey meat-and-potato pie with an oil-and-vinegar cole slaw and stir-fried broccoli.
