Beef Roast, Savory Onion (M, KLP, TNT)

1 3-lb. blade roast
4 medium potatoes, quartered
4 medium carrots, cut into 1-1/2" pieces
2 stalks celery, cut into 1-1/2" pieces
1 package dry onion soup mix
1 10-3/4 oz. can condensed "cream" of mushroom soup with 1/3 less salt

Heat oven to 325°F. Cut aluminum heavy duty foil to measure for a 3- or 4-qt. roasting pan.

Place roast in center of foil; arrange veggies around roast. Sprinkle roast and veggies with soup mix; spoon condensed soup over veggies and seal foil securely.

Bake at 325°F for 2-3 hrs. until roast tests done nice and tender. Remove meat and veggies to platter and spoon sauce over all.
