Beef Roast, Mustard Crust (M, TNT)

Serves: 6 to 8

3-4 lb. rolled roast (I use shoulder roast)
3 tablespoons oil
2 teaspoons dry mustard
2 teaspoons salt
2 teaspoons flour
Garlic to taste
1 teaspoon sugar

Combine oil with remaining ingredients and make into a paste. Rub all over meat.

Roast uncovered at 325°F until done, 30 to 35 minutes per lb. for medium, about 1-1/2 to 2 hours for 3-1/2 lbs.
