White Sauce:
Slice eggplant into 1/2" slices. Heat oil in a 10" skillet and fry eggplant lightly on both sides, approximately 3 minutes. Remove and place in 7"x11" dish.

4-5 tbsp. oil
2 pounds ground beef
1 onion, peeled and diced
2 cloves garlic, minced
1 tsp. oregano
1 tsp. thyme
Dash cinnamon
Dash salt
Dash pepper
1-1/2 cups tomato sauce
3 tbsp. margarine, melted
3 tbsp. flour
1 cup nondairy creamer or water
Dash salt
Dash nutmeg
Combine ground beef with onion, garlic, spices, salt and pepper, and tomato sauce in 10" skillet. Simmer on low flame until meat is cooked. Spoon meat sauce over eggplant in casserole dish.
Melt margarine in small 1-quart saucepan and add flour. Stir together, then add nondairy creamer or water and cook until thickened. Add salt and nutmeg. Heat through but do not boil. Pour sauce over meat mixture in baking dish and bake for 40 minutes.
