Meatloaf, Surprise II (M, KLP, TNT)

Serves: 6 to 8

2 lbs. ground meat
1 large onion
2 eggs
3 tbsp. water
Salt, pepper, garlic powder, to taste
1/2 cup matzo meal or bread crumbs
4 hard boiled eggs, peeled
1 small can or jar of tomato sauce (plain or flavored, I prefer flavored)

Put the ground meat in a bowl and make a well. Add the 2 eggs and water. Grate in the onion. Season to taste. Add the matzo meal, tablespoon at a time until desired consistency is reached.

Lay meat mixture flat in baking dish. Lay the 4 hard boiled eggs across the meat. Roll the meat up around the eggs. Make sure the meat is well sealed by pinching it together.

Pour the can or jar of tomato sauce on the loaf. Bake uncovered at 350°F for 35 to 45 minutes, basting occasionally.

When sliced the meatloaf makes a lovely presentation.

Poster's Notes:
I also make this in the microwave. After pouring on the sauce, I cover with vented plastic wrap and bake on high for 18 minutes. You need to check your own microwave as different manufacturers and models cook differently, depending on voltage, etc.
