Meatball Stew, Manischewitz (M, KLP, TNT)
Source: Manischewitz (with my additions)
Serves: 6 to 8

Original ingredients:
2 pounds ground beef
2 stalks celery, sliced
2 eggs, slightly beaten
2 medium onions, chopped
3/4 cup Manischewitz Matzo Meal
1/4 teaspoon garlic powder
1 teaspoon salt
1-1/2 teaspoon salt (if desired)
1/8 teaspoon pepper
1 can Manischewitz Tomato & Mushroom Sauce
1/4 cup tomato juice
1 cup water
6 young carrots, sliced
1 recipe matzo balls (see box)

My Additions:
1/4 lb. string beans or green peas (not KLP for Ashkenazim)
6 red potatoes quartered
1/2 lb. pearl onions
2 diced zucchini

Mix beef with next 5 ingredients. Shape into 12 balls.

Place vegetables in a large pot, top with meatballs. Add seasonings, Tomato & Mushroom Sauce, and water. Bring to a boil, reduce heat, cover; simmer 45 minutes.

Add cooked matzo balls, cover and cook 15 minutes longer, basting frequently.

My Changes:
I cook the veggies separately in the microwave, cook the meatballs in the oven to get rid of the fat, then combine all with the sauce and matzo balls and heat.
