Nutritional Info Per Serving: N/A
1 cup dry herbed bread crumbs (I used plain and added more of the herbs below + a few of my own)
1 pound ground beef (or ground turkey) (I used extra lean ground beef)
1/2 cup cranberry-orange relish (or whole berry cranberry sauce - not jelled)
1 egg
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. basil
1/2 tsp. thyme
1/2 tsp. garlic powder
1 tbsp. flour
2 tbsp. oil (I omitted this as I baked them instead of browning them, see note below)
1/2 cup cranberry-orange relish
1 cup beef broth
1/2 cup orange juice
1 tbsp flour
Combine bread crumbs, ground beef or turkey, 1/2 cup of relish, egg, salt, pepper, basil, garlic and thyme. Shape into 1" meatballs.
In medium saucepan, combine 1/2 cup relish and beef broth. Heat until it gently boils.
I baked them (at 350°F for about 20-25 minutes) as per similar recipes in Noreen's book (Meal Lean Yum), and then simmered them in the sauce as the recipe stated.
