Jambalaya, Vacation (M, TNT)

Dried salami, about 1/2 pound, diced
Vegetable oil
1 cup dried rice, cooked according to package directions
1 15-oz. can diced or stewed tomatoes
1 can black or red beans (drained and rinsed)
1 green pepper, diced
1 onion, diced
Dried herbs (oregano, basil, thyme)
Red pepper flakes (or a few drops of hot sauce)

Sauté diced onion and green pepper in oil until translucent, add diced salami, stir and cook for about 3 to 5 minutes. Add can of tomatoes, beans, cooked rice, herbs, pepper and cook another 5 minutes or so.

Poster's Notes:
This is a really quick, delicious dinner. You need a dried salami which can be used in other meals. Cook the rice while showering off the sand from the beach or while sipping on a nice rum drink.
