1/4 cup finely chopped onion
In a medium bowl, combine the onion, tomato paste, garlic, salt, rosemary, pepper, and allspice. Add to the ground beef and mix well. Shape the mixture into six patties, each about 3/4" thick.
Place the patties in a shallow dish and pour the beer over them. Cover and marinate for 6 hours or overnight, turning once.
Preheat or prepare the grill for high heat. Drain the burgers from the marinade and discard the marinade.
Set the buns, lettuce and onion slices aside. If you are grilling over charcoal, cook the burgers on the rack, uncovered, directly over medium coals for 14-18 minutes or until the meat is no longer pink. Flip once. With a gas grill, reduce the heat to medium and grill, covered, for 14-18 minutes.
Flip once. While the burgers are cooking, mix together last three ingredients for the mustard sauce.
Remove the burgers from the grill and serve on lettuce-lined buns with the onion slices and sauce.
