1 pickled brisket (corned beef)
Wrap all ingredients in foil. Cook until fork tender.

Pickling spices to taste
1 can diced tomatoes
1 whole jalapeno sliced (I kept the seeds for heat)
1 small can vegetable juice or tomato juice
I just made a corn beef dinner by cooking a pickled brisket (corn beef) in the
crockpot. I wrapped it in foil (to keep it from drying out due to the small quantity of liquids) adding pickling spices, a can of diced tomatoes and slicing up one jalapeno. After cooking it for a while, I added V-8 juice to keep it from drying out. Normally one would cook it in water with pickling spices. This was much better; my son even made a sandwich and proclaimed it a hit.
