1 5-6 lb. piece of corned beef
Boil the meat in a large pot for 3-4 hours, changing the water every 45 minutes. Spill out the water. Marinate the meat overnight in the ginger ale and peppercorns.
Drain the liquid in the morning, reserving about 1/4 cup of the liquid. Glaze the meat with a mixture of the brown sugar and reserved liquid. Place pineapple slices on and around the meat and pour the juice over it.
Bake in a moderate oven for 45 minutes. Slice when cooled and return to pan to reheat.
