1 10-ounce package fresh spinach
Split the muffins and butter with garlic butter. Cook and squeeze dry and chop spinach.
In a bowl mix spinach, grated cheese and mayonnaise with the onion. Spread the mixture on English muffin halves, using all the mixture evenly.
Bake at 350°F for 10 or 15 minutes. (You can also broil for 2 minutes after baking.). With a serrated knife, cut each half muffin in 4 pieces. Serve hot or warm. These freeze well before baking.
Can also be made using tons of green onions, sliced, and cheddar and Swiss cheese with mayonnaise, no spinach.

I would assume that you could also use frozen spinach, just defrost and squeeze out the liquid.
