Try to select red potatoes of uniform size and roundness.
Boil them. When cool, cut in half, keeping skin on.
Using a melon baller, scoop out a small amount of potato from the center of the cut side of each potato half.
Fill the crevice with sour cream. Mince the lox and sprinkle on top of sour cream.
