Pate, White Bean and Sun-Dried Tomato (P, TNT)

Yield: 2 cups

1 tbsp. safflower or olive oil
1 large onion, chopped
2 cloves garlic, minced
1-1/2 cup cannellini or navy beans, well-cooked
1/3 cup oil-cured sun-dried tomatoes
Juice of 1/2 lemon
1 sprig parsley
1/4 tsp. dried thyme
1/4 tsp. summer savory
2 tbsp. water
Salt, to taste
Pepper, to taste

Heat oil in skillet, sauté onion until translucent, add garlic and continue to sauté until onion is beginning to brown.

Add with remaining ingredients, except salt and pepper, to food processor and make a paste. Add salt and pepper as needed.

I have been making this for years. It's easy and delicious and elegant. I have also made it with black beans.
