Lentil Pate (P, TNT)

Serves: Varies

1 cup lentils
5 cups water
3 eggs, hard boiled
1 large onion
1 cup pecans, toasted
1 large handful of fresh parsley
Fresh taste
2 tsp. chopped garlic
Kosher salt
Oil for frying onion

Cook lentils in 5 cups of water until the consistency of mushy oatmeal porridge.

Chop onion into small dice and fry in oil until golden brown. Add salt, pepper and granulated sugar to the onion to help it caramelize.

Grind all ingredients together in food processor and season to taste. Chill well before serving.

This makes quite a large amount. It freezes very well. Delicious served with crackers or vegetables for dipping.
