Mushrooms a la Grecque (P, KLP, TNT)

Serves: 4 to 6

250g button mushrooms, washed and stems trimmed

3 tbsp. olive oil
3 tbsp. lemon juice
1/2 cup white wine or water
1 to 2 cloves garlic, crushed
1 bay leaf
Sprig of thyme
Small bunch parsley, chopped
Salt and freshly ground black pepper to taste

In a pot, bring the marinade ingredients to the boil and add the mushrooms. Boil, stirring, for 5 minutes.

Remove from heat and when cool adjust seasoning and refrigerate in the marinade.
