Knishes, Potato-Spinach-Cheese (D, TNT)

Yield: 1 dozen

4 medium baking potatoes
3 eggs
2 bunches (20 ounces) spinach
2 tsp. baking soda
A dash of salt
3 cups Mozzarella, shredded
3 cups Cheddar, shredded
2 cups feta cheese
1 package puff pastry dough
Egg yolk

Boil potatoes until soft but not soggy. Mash potatoes well. Let cool.

Beat in 3 eggs into the potatoes. Mixture should be smooth. Let rest.

Chop and fast fry spinach until soft. In a large bowl stir together potato mixture with spinach, baking soda, salt, and all three cheeses.

Lay out puff pastry. Cut into 8" squares. Place 1/3 cup of potato, spinach and cheese mixture into the middle of puff pastry square. Place square in a diamond shape. Take one corner of the puff pastry square and fold over the mixture to the other corner. Take a knife and roll up the edges of the pastry dough so it forms a fluted ridge preventing the cheese mixture from leaking out.

Brush egg yolk on top. Put pastry in oven at 375°F until golden brown.

Variation:
Use filo/phyllo/fillo dough instead puff pastry dough for an authentic Greek style snack. Spread melted butter in-between three filo sheets. Cut the sheets into squares, placing the cheese mixture in the middle of each square. Fold squares over the mixture. Bake at 375°F until golden brown.
