2 tsp. roasted garlic paste
With the back of a spoon, smush the garlic paste into the softened butter.
Cut one half of the loaf in half lengthwise. Spread 1/2 of the garlic-butter on each half of the bread. Sprinkle with Parmesan cheese, if using.
Place the bread on a baking sheet and toast under the broiler for a couple of minutes, watching closely so it doesn't burn.
Cut as soon as you can stand to, and serve hot.

1 loaf sour French bread, cut in half crosswise
For the garlic paste, I roast a head, or more, of garlic, then squeeze out the cloves and smush them into a paste.
