Salmon Mousse II (D/P, TNT)

Yield: About 4 cups

1 envelope unflavored kosher gelatin or 1 tablespoon
2 tablespoons lemon juice
1 small onion, sliced
1/2 cup boiling water
1/2 cup mayonnaise
1/4 teaspoon paprika
1 teaspoon to 1 tablespoon dried dill
1 1-pound can salmon
1 cup heavy cream or nondairy coffee whitener

Blend gelatin, lemon juice, onion, and boiling water at high speed for 40 seconds. With motor off, add mayonnaise, dill, paprika, and salmon. Blend all at high speed. Add cream, 1/3 at a time.

Pour into 4-cup oiled mold and chill.

Run knife around edges to unmold. Garnish with sliced olives.

Poster's Notes:
I use more gelatin than called for. I use less cream than called for.
