Salmon Cheese Log (D, KLP, TNT)
Source: "Better Homes and Gardens Encyclopedia of Cooking, Volume 1, page 70"
Yield: 2-1/2 cups

1 15-1/2 oz. can of salmon
1 tbsp. lemon juice
2 tsp. grated onion
2 tsp. prepared horseradish
1/4 tsp. liquid smoke
Salt and pepper, to taste
8 oz. softened cream cheese
1/4 cup chopped pecans
2 tbsp. minced parsley

Drain and flake salmon. Combine with other ingredients (EXCEPT pecans and parsley). Blend well and shape into ball or log on waxed paper. Wrap and chill several hours.

Combine, (I omit this part) pecans minced parsley on waxed paper. Roll ball/log in mixture and chill.

Poster's Notes:
This recipe is a regular at our party tables. I often tell people it is made with poor man's lox.

I hollow out a dark rye and use as a bowl, rather than shaping the mixture, and serve with bite-size slices of dark rye. Also wonderful served with crackers.
