Herring, in Sour Cream I (D, TNT)

2 fillets of matjes herring, either vacuum packed or in containers (if you use the kind that comes packed in oil, drain them well and give a quick rinse under the faucet)
1 small to medium sized onion, sliced thin and then quarter the rounds
1 170ml container of sour cream
Sugar to taste (about 4 tbsp.)

Slice the fillets about half a centimeter and then in half or even in thirds. Mix in the rest of the ingredients. Let it sit in the fridge for about an hour or so to let the sugar blend into the cream.

If you're in a rush you can eat it right away. The sugar might still be a bit crunchy. But the taste is divine! I gave some to a friend of mine to taste and she polished it off in the blink of an eye!
