3/4 cup all-purpose flour
Combine flour, ginger ale, baking soda, salt, cayenne pepper, and egg until smooth to make batter.
Line up bowl of coconut, batter, and foil-lined baking sheet.
Heat oil to 350°. Dip banana pieces in batter, dredge in coconut, pressing slightly to help coconut stick. Place dipped banana pieces on baking sheet. Fry banana pieces in small batches in hot oil for about 3 to 5 minutes, or until golden brown.
Remove with tongs and drain on paper towels. Serve immediately or keep warm in low oven.
