1/3 cup olive oil
Heat the oil in a large skillet, and in it fry the onions until very dark. Add the zucchini, and fry until all liquids evaporate. Mixture will look very dark and reduced.
Add all remaining ingredients, stirring quickly until the eggs look set. Chill completely.

6 large zucchini, grated in the food processor
3 eggs, or 6 egg whites (about 1/3 cup if you are using egg substitute)
A good pinch of nutmeg, salt, and pepper to taste, dry thyme, and basil to taste
