1 can (19-oz.) large lima beans, drained, but reserve 2 to 3 tbsp. of the liquid
Using food processor, process the beans until smooth, then add the olive oil and the liquid.
Add the salt and pepper. Remove from processor and fold in the onions.
Adjust the seasonings to taste.
If you like it to have a thinner consistency, add a bit more liquid.

My mother, A"H, used to make this regularly and when my kids got married, they would ask her to make it for them, too. We all loved it, and the bonus is that is that it is very healthy! I serve it with homemade crackers.
