Chicken Wings, Chinese II (M, TNT)

Serves: 8 to 12 as hors d'oeuvres

24 chicken wings
1/2 cup soy sauce
1/2 cup firmly packed brown sugar
1/3 cup dry sherry
1 slice fresh ginger about the size of a quarter
1 teaspoon sesame oil
1/4 tsp cinnamon

Sever the chicken wings at the joints, reserve the wing tips for soup if desired, and arrange the wings in a baking dish just large enough to hold them in 1 layer.

In a bowl combine all the marinade ingredients, spoon the mixture over the wings and let the wings marinate at least 2 hours but no longer than 8 hours.

Bake the wings in a preheated oven 425°F basting them and turning frequently, for 40 minutes or until they are tender and well glazed.
