Chicken Gizzards, Pickled (M, TNT)

Serves: 6 to 8

1 cup white wine vinegar
1 cup water
1 medium onion, sliced
2 garlic cloves, sliced
2 tbsp. pickling spices
1 tsp. kosher salt
1 to 2 lb. chicken gizzards

Simmer the gizzards until tender.

In a separate pot, combine the first six ingredients. Bring to a boil, and cool. Add gizzards. Chill for at least one day.
